Happy Pretzel Day!

Ingredients:
4 cups flour
1/3 cup brown sugar
1 and 1/3 cup warm water
1 pack or 1 tbs of dry yeast
Kosher Salt
2-3 quarts of water in shallow pan
4 tbs baking soda

Instructions:
Set Oven to 400°F (Celsius is too hot)
Hot Water Bath:
Heat 2-3 quarts of water in a shallow pan with 4 tbs baking soda; bring to slow
rolling boil and maintain.
Dough:
Dissolve 1/3 cup brown sugar in 1 and 1/3 cup warm water (not hot); add yeast to
this concoction of love. Allow to sit 3-5 minutes (or until bubbles).
Measure 4 cups of flour into a mixer/food processor; slowly add concoction of
love until stiff dough has formed. (May need to add 1 to 2 extra tbs of water.) Knead
dough until smooth; dough ought to feel like playdough. Cut into bits (12 pieces for
med. Pretzels, 8 pieces for large pretzels) form them into deliciousness. Put them into
the water bath approx. 1 min. drain and place on heavily greased baking sheets; add salt
as desired. Bake for 15 to 18 minutes until golden brown. EAT THOSE SUCKERS
(once they cool just a smidgen)

Option:
Freeze after the water bath to cook later for more deliciousness in the future.
